Seared Lemon Smokehouse Salmon
with Savory Brown Rice & Garlic Broccolini
A lighter Smokehouse dinner that still delivers big flavor: tender salmon with a beautifully seared crust, fresh lemon, garlic, and Bobby Q. Smokehouse Spice Rub, served over savory brown rice with crisp-tender broccolini.

Ingredients
For the salmon: 4 salmon fillets, about 6 oz each; 1½ tablespoons Bobby Q. Smokehouse Spice Rub; 1 tablespoon olive oil; 1 tablespoon butter; 2 garlic cloves, minced; 1 fresh lemon; and 1 tablespoon chopped parsley.
For the brown rice: 2 cups cooked brown rice; 1 tablespoon butter; ½ teaspoon garlic powder; ¼ teaspoon onion powder; 2 tablespoons chicken or vegetable broth; and black pepper to taste.
For the broccolini: 1 bunch broccolini, trimmed; 1 tablespoon olive oil; 2 garlic cloves, thinly sliced; 1 tablespoon fresh lemon juice; and a small pinch of salt and cracked black pepper.
Preparation
Pat the salmon completely dry. Lightly coat with olive oil and season generously with the Smokehouse Spice Rub, pressing the seasoning onto the surface.
Heat a heavy skillet over medium-high heat. Place the salmon presentation-side down and sear without disturbing it for about 4 minutes, until a deep golden crust develops. Turn and cook another 3–5 minutes, depending on thickness.
Reduce the heat and add the butter, minced garlic, and a generous squeeze of fresh lemon. As the butter foams, spoon the lemon-garlic butter repeatedly over the salmon. Remove when the center is moist and flakes easily. Finish with parsley and fresh lemon.
For the rice, warm the cooked brown rice with butter, broth, garlic powder, onion powder, and black pepper until fluffy and savory.
Meanwhile, sauté the broccolini in olive oil until bright green and lightly charred. Add sliced garlic during the final couple of minutes and finish with lemon juice.
